Chilli 'Pimiento de Padron'
RESTOCKING AUGUST 2024
Capsicum annuum
Padrón peppers are small and green with an intense flavor that is piquant, sweet, and a little nutty. Named after the town where they originated, they are a famous tapas dish, fried in olive oil until blistered and served with salt - Delicious and once tried, addictive!
Famous Spanish heirloom
3cm full bodied flavour, tapered fruit
Typically sautéed in olive oil with a little sea salt and eaten as tapas (appetizers) in Spain
Because of their low level of capsaicin, about 1 out of 20 fruits will be hot, and the rest mild.
Harvest Padron peppers when they are 2.5-3.5cm long. As the fruit matures, grows longer, plumper and colours to red, the heat increases.
The full bodied flavour of the padron offers lends itself to many dishes, including omelettes, fried potatoes and salsa. Fried padrons are incredibly easy and so beloved in our home, they are a summer pre dinner ritual.
According to legend, these peppers made their way to Spain from South America via Spanish monks in the 16th century, who began growing them inside the walls of their monastery in the village of Herbón.

TRANSPLANTS (recommended) - Sow seeds into shallow flats, 4 seeds/2.5cm about 8 weeks prior to transplanting. If possible, maintain soil temperatures at 27-32°C. Capsicum seeds germinate very slowly in cooler soil. When the first true leaves appear, transplant seedlings into 5cm cell-type containers or 10cm pots. Grow plants at approx. 21°C day and 16°C nights. Harden off plants by slightly reducing temperature to 15-18°C and reducing water for 2-3 days before transplanting.
Transplant out after frost when the soil is warm and weather is settled. Ideal seedlings have buds, but no open flowers. Set plants 30-45cm apart in rows 60-90cm apart, or 2 rows with 45cm between plants.
NOTE – 'Days to Maturity' are from transplant to green fruit. The flavour also sweetens as the fruit fully matures.
