Capsicum annuum

  • Famous Spanish heirloom
  • Small, full bodied flavoured, tapered fruit
  • Typically sautéed in olive oil with a little sea salt and eaten as tapas (appetizers) in Spain

Padrón peppers are small and green with an intense flavor that is piquant, sweet, and a little nutty. Named after the town where they originated, they are a famous tapas dish, fried in olive oil until blistered and served with salt - Delicious and once tried, addictive!

Because of their low level of capsaicin, about 1 out of 20 fruits will be hot, and the rest mild.

Harvest Padron peppers when they are 2.5-3.5cm long. As the fruit matures, grows longer, plumper and colours to red, the heat increases.

The full bodied flavour of the padron offers lends itself to many dishes, including omelettes, fried potatoes and salsa. Fried padrons are incredibly easy and so beloved in our home, they are a summer pre dinner ritual.

According to legend, these peppers made their way to Spain from South America via Spanish monks in the 16th century, who began growing them inside the walls of their monastery in the village of Herbón.
