Cucumber, Tomato, Feta and Olive Salad

Ingredients
2 medium cucumbers cut into 1/4's and then into 1cm cubes
20 cherry tomatoes cut into 1/4's
15 kalamata olives cut in half
200 gms Main Ridge Dairy feta cheese cut into 1cm cubes
Balsamic Vinaigrette
3 tbsps balsamic vinegar
5 tbsps olive oil
6 basil leaves cut into thin slivers
salt and freshly ground pepper
Method 1. Cut all vegetables, olives and cheese into a large bowl. 2. Add vinegar, oil, salt, pepper and basil and stir. 3. Serve over lettuce or on its own.
