Lovage adds an unidentifiable, richness to a vegetable stock and sauces, enlivens salads, makes a soup pop or jazzes up a bowl of mussels. A little goes a long way and is best harvested young and tender. The herb turns more bitter as it matures.
It sends up a 60cm high umbel flower that is beloved by beneficial insects. The easily collected seed are slightly sweet and make an excellent substitute for celery seeds.
It is native to Europe and parts of Southwestern Asia, and has been cultivated by humans for centuries. In medieval Europe it was used as both a foodstuff and a medicinal herb, and was a popular ingredient in love potions. Its name is derived from ‘love ache’, which means ‘love parsley’, with ‘ache’ being a medieval word for parsley.
