An heirloom white cabbage renowned for its extraordinary sweetness and immense, elegant conical heads. Filderkraut produces truly spectacular cabbages, typically weighing 5–8 kg, packed with natural sugars that make it exceptional both raw and cooked.
This mid- to late-season variety is a standout choice for late autumn and winter harvest, with excellent holding ability in the field and reliable storage in the coolroom. Its dense, oversized “cheeks” are especially prized for sauerkraut, producing kraut of remarkable sweetness and depth of flavour. Equally delicious shredded fresh, cooked slowly, or added to winter soups and stews.
We found Filderkraut held beautifully in the field through to September, providing a winter full of sauerkraut, coleslaw, minestrone, and countless cabbage-based meals. The flavour is so enticing—and the heads so generous—you’ll find yourself inventing new ways to enjoy it.
Originating in the Filder Valley of Germany, Filderkraut is believed to have been introduced by monks in Denkendorf. Records of this variety date back to the 1700s, and its survival for more than 300 years speaks volumes. This is a cabbage that has endured for very good reason.

TRANSPLANT (recommended) - Sow 2 seeds per cell- thinning to one. Transplant at 4-5 weeks old. Filderkraut cabbage grows most sweet and tender in cool temps in biologically rich soil. Use row cover to protect from cabbage and diamond back moth.
DIRECT SEED- Sow 3-4 seeds 45cm apart with 60cm between rows; thin to one plant per 45cm.
