December! Victorian’s declare the beginning of Summer on 1 December. With Summer Solstice on 21 December, we have entered ten weeks of long days and expanded sunrise and sunsets!

Butter lettuces are truly the Belle’s of the Spring ball. After a Winter of eating hardy cos type lettuces, the delicate nature of the butter lettuces is so welcome. The soft sometimes suede like texture and buttery flavour is delightful eaten raw, with a bit of salt, or topped with freshly shelled peas, radish and a simple vinegarette.
