Rosa Bianca is one of Italy's most celebrated heirloom eggplants, originating in the fertile agricultural region of Sicily, where it has long been prized for its exceptional eating quality. Distinguished by its rounded fruit, delicately brushed with soft lavender and white, Rosa Bianca is renowned for its incredibly mild, sweet flavour and silky, creamy texture.
Unlike many modern eggplants, Rosa Bianca contains very little bitterness and virtually no trace of the harsh compounds that often require salting before cooking. The dense, creamy flesh absorbs flavours beautifully while maintaining its luxurious texture, making it a favourite of chefs and home cooks alike. It excels roasted, grilled, baked, stuffed or simply sliced and pan-fried in olive oil.
An early to mid-season variety, the vigorous plants produce generous crops of medium to large fruit over an extended harvest period. Its combination of outstanding flavour, beauty and productivity has earned Rosa Bianca a place among the world's finest heirloom eggplants and a treasured variety for gardeners seeking exceptional quality.

TRANSPLANT (recommended) - Sow seed indoors during early spring, or 6-8 weeks prior to planting outdoors. Sow 4 seeds/2.5cm, 6mm deep, and maintain soil temperature at 27-32°C until emergence and 21°C thereafter. Seed will not germinate in cool soil.
After true leaves form, transplant into 5-8cm pots or soil blocks. To harden plants, reduce water and temperature to about 16°C for about a week before planting out.
Transplant outdoors late spring or early summer once the weather has thoroughly settled. Eggplants are tender, and cold weather may weaken them.
