German Winter Thyme is the classic garden thyme, prized for its exceptional flavour, reliability and outstanding winter hardiness. Forming a dense, low-growing evergreen shrub, it produces masses of aromatic foliage on heavily branched stems, providing abundant harvests throughout the growing season.
Its complex flavour combines warm, earthy notes with hints of pine, citrus and gentle sweetness, making it one of the most versatile culinary herbs. Fresh or dried, the leaves complement roasted vegetables, poultry, lamb, soups, stews, marinades and herb blends, retaining their flavour exceptionally well after drying.
In the garden, German Winter Thyme is as valuable as it is beautiful. During flowering, the delicate blooms are highly attractive to bees and other beneficial insects, making it an excellent companion plant in orchards, vegetable gardens and pollinator-friendly landscapes. The dense evergreen foliage also makes an attractive edging plant, thriving in borders, raised beds, containers and rock gardens.
For centuries, thyme has been treasured as both a culinary and traditional medicinal herb. Herbalist Anne McIntyre describes it as one of the classic household herbs, valued for supporting respiratory and digestive health and long appreciated for its naturally aromatic essential oils.
A drought-tolerant perennial once established, German Winter Thyme performs best in full sun and well-drained soil. In colder climates, a light winter mulch will help protect plants during severe frosts.
Edible Flowers: The flowers are small, but have a mild thyme flavour. Use the flowers in potato dishes and salads.

TRANSPLANT (recommended) -Start seeds in flats 8-10 weeks before transplanting in warmed soil when threat of frost has passed. Sow seeds on top of the growing medium and cover with a thin layer of soil mix. Keep moist until germination. Transplant to individual containers or soil blocks when plants have 4 true leaves. Harden off when a good root system has formed. Transplant outside and space 15-20cm apart, in rows 30-45cm apart.
Pinch off growing tips of upright growing varieties to make bushier plants.
HARVEST - Cut for fresh use once the plants have become established. Entire plants can be harvested when flowers are in the bud stage. To dry, hang the plant in a warm, dark, well-ventilated location.
