Chef Dan Barber and Cornell University vegetable breeder Michael Mazourek worked for years to create this hand size butternut shaped squash. With flavour being the guidepost, Honeynut is immediately vibrant. The nutrients and natural sweetness - more malt-rich rather then sugar sweet - combined with the single serve size sent chefs clamouring for it when it was first introduced.

The thin, edible skin signals ripeness by turning from green to terracotta. Plant early to allow full maturity. Compact vines are great for containers or trellises. Plants are resistant to powdery mildew and squash vine borers. You can store them for a few months, but if they start to get wrinkly, use right away.

A portion of the sales of this variety are returned to the Cornell University breeding program to support breeding in the public sector.
