Butter lettuce season has returned to Transition Farm.

After a winter of crisp cos and sturdy little gems, the first butter lettuces of spring always feel like a celebration. Their soft, almost suede-like leaves unfold gently from tightly wrapped hearts, revealing delicate shades of pale to fresh spring green. Each layer seems more beautiful than the last.

 And then there's the flavour.

Sweet, buttery and incredibly tender, butter lettuce needs very little to shine. We often eat it simply with a pinch of good sea salt, or dressed with a light vinaigrette alongside freshly shelled peas, peppery radishes and whatever else the spring garden is offering that day. The juicy leaves almost melt in your mouth.

Surrounded by spring broccoli, English spinach, fennel, peas, silverbeet, kale, beetroot and artichokes, butter lettuce somehow steals the show. It reminds us of a ballroom filled with silk and chiffon dresses swirling through the golden light of evening—the belles of the spring ball.

Why we love growing butter lettuce

Here in Southern Victoria, we sow butter lettuces from July through to mid or late October, harvesting beautiful heads from September until early January.

While some varieties tolerate warmer weather better than others, we believe butter lettuces are at their absolute best in the cool, gentle conditions of spring. The mild temperatures allow them to develop their beautifully blanched centres—crisp, sweet and wonderfully tender.

It's one of those vegetables that simply tastes better when grown in season.

Over the years we've trialled many butter lettuces, and the varieties we've selected all have one thing in common—exceptional flavour.

Each also offers something a little different.

Some produce beautifully frilled leaves that capture dressing in every fold. Others have silky smooth leaves, richly coloured outer wrappers or particularly sweet, buttery hearts. Their maturity dates also vary slightly, allowing us to harvest over several weeks from a single sowing—a feature we especially appreciated when growing for market.

From salad mix to centrepiece

This season we've begun adding several of our butter lettuces to our salad mix, and the results have been incredibly promising.

But if we're honest, we still think they're at their finest when harvested as complete heads.

There's something magical about cutting into a full butter lettuce and revealing those tightly layered, pale golden leaves hidden inside. Each variety brings its own character—some gently puckered to hold a vinaigrette, others silky smooth with subtle differences in flavour.

They're the kind of lettuce that starts conversations around the table- so Spring - so European - So divine!

Serve them beneath lightly steamed asparagus, alongside a simply cooked piece of fish, or with freshly picked peas, herbs and radishes. Simple allows these lettuces and their spring delicacies to shine!
